Maple-glazed parsnip, chestnut and feta loaf

At first, the conversions were a little difficult for this one, but the end result was fantastic and looked just as good as the picture! I also added a couple of substitute ingredients: sunflower seeds for pine nuts, sweet potatoes instead of parsnips, and cow's milk cheese in place of feta.


Giant Hogweed, sometimes known as giant cow parsnip or hogsbane, can grow up to five metres tall. The sap is toxic and can cause very severe burns and scars.
