Besan Cheela are a popular North Indian street food similar to pancakes. This recipe uses chickpea flour, water, fresh coriander, chilli and salt get mixed into a batter, then cooked as you would a run of the mill pancake in a hot nonstick pan.
Chickpea flour pancakes - surprisingly good! I actually poured the batter into our waffle maker and the results were fantastic. These are filling but not dense. They have a mild earthy taste, but if that bothers you it is easily covered by butter and pure maple syrup. We also added sliced bananas as a topping. Really so good.
