Colombian Chicken Stew With Potatoes, Tomato, and Onion
The pressure cooker is a central part of the cuisine of the Colombian Andes. This extraordinarily simple chicken and potato stew uses just five ingredients (ok, seven if you count salt and pepper), but the flavor that comes out after a brief cook under pressure is complex, rich, and filling.
Indian Spiced Stew with Chicken and Potatoes: Delish. Used 7 boneless chicken thighs, 2 c. chopped onion, 8oz can tomato sauce, 1 white potato and added 1/2 a decent sized eggplant (chopped small). Subbed 1/2 & 1/2 for the cream. It was thick with just 3 cups broth but we liked it that way. Served with naan.
