King Ranch Chicken Quiche - all the flavors of King Ranch Casserole in a quiche! Chicken, Rotel tomatoes, Velveeta, eggs and heavy cream baked in a pie crust. SOOOO good! We ate this for lunch and dinner the same day. You can make this ahead of time and freeze unbaked for later. This is always a hit in our house! Great Mexican quiche!

Chicken Cheese Quesadilla Pie - (10") LC tortilla, 3C Chicken, 1/2 C fresh cilantro (chop), 1/3 C pickled jalapeño (drain), 2 C ched. cheese (shred), Salt & pepper, 2 lg eggs, 1 C milk, 1 C flour, 1 tsp. baking powder -- Preheat 450F. Grease 9" pie plate. Press tortilla into it & spray w/Pam. Mix chx, cilantro, jalapeños (opt.), 1 C chz, ½tsp salt, & ½tsp pep. & put on tortilla. Mix eggs, milk, flour, b. pwdr, & ½ tsp. salt 'til smooth & pour over filling, top w/ 1 C chz. Bake 16-20 min.
