Chayote and poblano soup

chayote_poblano soup- I subbed the poblano for some hatch green I had pre-roasted in the freezer and added some coconut milk to make it a little creamier...amazing. Served it over arroz con rajas. Cold night in effing MAY...I WON!

Baked Chayote Squash -- A friend of my daughter's brought me some chayotes. I'd never heard of them before, and decided to research them to see how to best use them. Although the two reviews of this recipe are pretty awful, the reviewers seemed adverse to anything other than simple prep work and were unfamiliar with this squash-fruit. I think this sounds quite yummy and plan to make some in the next few days or so!
