Aqua Ceviche: INGREDIENTS • 2 lbs of fresh Grouper, cut into 1/2 inch pieces • 1/2 cup of fresh squeezed lime juice • 1/2 of red onion, sliced • ½ cup of Aji Limo • 1 cup of chopped fresh garlic • 2 teaspoons of sea salt • Dash of black pepper METHOD • In a dish, place the fish, onion, garlic, salt, pepper and Aji Limo. Cover with lime juice. Stir, making sure the fish gets covered with the acidic lime juice. Serve in a chilled martini glass and enjoy!
