Coconut Milk and Thyme Braised Chicken - Delicious and easy to make one pot chicken dinner cooked in thyme-infused coconut milk and garlic. This was SO GOOD, I may never go back to grilling chicken, again!
When I'm preparing this dish, it's all I can do to wait until it's finished simmering to get a taste of the awesome gravy. Braised Chicken Thighs with Mushrooms and Creamy Polenta
So good! Recipe calls for only butter to braise but I needed to add some veg oil to keep it from burning. Otherwise, followed the recipe and it was a hit for all who enjoyed - will be making again! -AG
