Beet Greens from Simply Recipes.... didn't have bacon so used butter. Also replaced about 1/4c. of the water with white wine and added a handful of chopped walnuts. Really good! Wasn't expecting to like beet greens, but I do :)
Beet greens contain a large amount of vitamins A and K, are very high in Potassium plus anti-oxidants Beta Carotene and Lutein. Beet greens can be substituted in any recipe that calls for spinach. (Other foods high in Potassium are, French Beans-raw, Raisins, Prunes, Avocado). Very good if you take diuretics.
