The Best Batter Yet. I took an old Beer Batter recipe and changed it to suit me. So we never go out for Fish n Chips anymore because we like mine better. Mix 1 cup flour 1 tsp salt 1 tsp baking soda 1 tbsp sugar Add about 1& 1/2 cups club soda( original recipe called for 1cup of beer) I just add the whole can of club soda for a thinner batter. Whisk well. Add 1 beaten egg and 1 tbsp of oil. Roll pieces of fresh haddock in flour and then deep fry until golden brown.

Nan's Batter for Fish

Nan s Batter for Fish from Pinner says: "like the take-out batter used here in Newfoundland for fish. Very tasty with the perfect amount of each ingredient without it being too oily or salty. I just fried this in a pan with some oil. I guess you can deep fry them also. This made enough to coat about 1 1/2 -2 lbs of cod."
