If you have extra hot peppers, pepper vinegar is a great condiment for meat or greens. Just boil a pint of vinegar, add a tsp. of salt, and pour it over your peppers. It will be ready to eat after a week and lasts indefinitely.
Sweet and sour pickling recipe. I didn't use this for banana peppers and I canned them instead of making refrigerator pickles. I also added a couple of hot peppers which makes them spicy sweet and sour and used this to can pickles and pickled squash.
