Bacon Cheese Potatoes (Slow Cooked) ¼ pound bacon, diced 2 medium onions, thinly sliced 4 medium potatoes, thinly sliced ½ pound cheddar salt and pepper butter Green Onions Layer half bacon, onions, potatoes and cheese in crockpot. Season to taste and dot with butter. Repeat layers Cover with foil. Cover and cook on low for 10-12 hours.
Sweet Potato, Broccoli & Cheddar Patties: 1 large sweet potato, 2 c broccoli, 2 oz cheddar cheese, salt & pepper. Bake sweet potato in oven until soft. Scoop out potato into bowl. Chop up broccoli, mix in potato, add cheddar cheese, salt & pepper. Make 6 patties. Add oil to pan, bake at 400 for 30-40 minutes, turning halfway.
HASSELBACK POTATOES I think of these Swedish roast potatoes as being rather like sauteed potatoes on the stem: each one is cut into thin slices across almost right through, but not quite, and then roasted in buttery oil; as they cook, the potatoes fan out, like slightly fleshy crisps with their bottoms still attached.
Scooping out the fluffy middle of a just-baked potato and mashing it up with a little butter and a couple of tasty extras before popping it back in the oven is a great way to make a jacket spud extra appealing. This spicy, mushroomy filling is delicious; there are a couple of alternatives too.
Healthy egg & chips - had this for tea tonight as part of a fast day. It was really tasty and a substantial amount . Two substitions though - I used low calorie spray instead of oil and cherry tomatoes as I had no mushrooms. Definately be trying this again (maybe as breakfast next time)!
