Ingredients: 200g Kataifi Pastry,150g melted butter,90g sugar,675g cream cheese,1cup sugar,1tsp vanilla,½cup sour cream,3eggs,lemon zest,½tsp rose water. Topping:1cup heavy cream,½tsp rose water,1tbsp powdered sugar,pistachios. Syrup: 1.5cups water,½cup honey Method:Cut kataifi pastry into small pieces.Pour melted butter and sugar,massage into pastry. Half into 8"cake tin for base, rest on tray Bake both at 175C for 15mins. Whisk cream cheese, sugar,vanilla,sour cream until smooth.Add eggs,lemon zest,rosewater.Pour into tin,bake 50mins at 175C. Chill 3hrs.Whip heavy cream,sugar,rosewater. Spread on cheesecake,top with kataifi pastry,pistachios,rose petals.For syrup,heat water,honey 8mins until thickened,cool before pouring on cheesecake.
