MUHAMMARA “MEAN” BEANS 🫘
Recipe: Muhammara "Mean" Beans is a quick and nutritious meal packed with protein, fiber, and plant-based omega-3s from walnuts. Here's what you'll need: Ingredients: • - 3 x 400g tins of cooked butterbeans (keep the water from 2 cans and drain one) • - 1 onion, finely diced • - 3 cloves of minced garlic • - 1 tsp smoked paprika • - 1 tsp cumin • - 1 tsp coriander • - Pinch of cayenne pepper • - 1/2 tsp salt • - 1/2 a low-sodium stock cube (if using regular stock cube, reduce salt quantity in the recipe) For the Muhammara: • - 80g toasted walnuts • - 3 red peppers, roasted in oil and salt for 20 minutes, skins peeled (or use a jar of ready roasted peppers) • - 2 tsp pomegranate molasses • - 1 tbsp red wine vinegar • - 2 tbsp olive oil • - 2 cloves garlic • - 1 heape

It’s a creamy sun-dried tomato pasta and it seriously might be one of the best pasta dishes! 😍
- pasta of choice - 2 garlic cloves - 1/2 red onion - 1/2 cup sun-dried tomatoes - 1 tbsp tomato paste - 1/2 lemon, squeezed - salt, to taste - fresh basil for the silken tofu cream: - 1 pack silken tofu (300g) - 2 tbsp nutritional yeast - 1 tsp white miso paste - 1/4 cup water Blend together the ingredients for the silken tofu cream until completely smooth, set aside. Cook the chopped red onion in an oiled pan over medium to high heat until soft. Reduce heat to low, add in the minced garlic, sun-dried tomatoes, salt, and cook for another minute. Then add in the half of the silken tofu cream, tomato paste, lemon juice, 1/4 cup pasta water and chopped basil. Stir in your cooked pasta and combine everything together. Top with black pepper and chilli flakes if you wish. 🎥@phitzee
