Tomato-Coconut Chickpeas over Cauliflower Couscous and Arugula! Credit @sweetgreensvegan  Pulse 1/2 head of cauliflower in a blender until it resembled couscous. Next, I added some Badia Sazon Tropical seasoning which is what gave it the flavor and color. I sautéed it on the stove for about 5-7 mins. ⠀ For the chickpeas, I sliced and sautéed 1 shallot in olive oil.
