Drink of the Week: Angel Eyes ✨️🩷
inside Proper Eats Food Hall at ARIA Resort and Casino in Las Vegas is Easy’s Cocktail Lounge, a sultry new speakeasy with a beautifully crafted cocktail menu. Easy’s signature cocktail, Angel Eyes, is Botanist gin-based and made with cantaloupe juice, orgeat, lemon and prosecco served in a flute glass with a rose sugar rim. Ingredients: • 1/2 oz. Lemon juice • 1/2 oz. Orgeat syrup • 1 oz. Cantaloupe juice • 1 oz. Gin Preparation: • Combine all ingredients into a tin with ice and shake. Double strain into a flute with rose sugar rim. Top off with Prosecco. Garnish with an edible rosé petal.

The Pale’s Soirée Spritz
Ingredients: 3 oz The Pale rosé wine 4 medium raspberries 1/2 oz lime juice 1/2 oz simple syrup (1:1) Mint leaves Preparation: Combine ingredients in a shaker. Add ice and shake, serve double strained into a wine glass with ice. Garnish with 2 raspberries on a pick and mint leaf.

Ingredients: -2 oz Silk’s Gin -1/2 oz Giffard Creme de Cacao -1 Egg White -3/4 oz Lime Juice -3/4 oz Matcha Syrup* -5 Mint Leaves *Matcha Syrup: Mix 2 Tbsp. matcha powder with 1 cup sugar and 1 cup hot water. Heat water, over medium heat dissolve sugar and matcha, stir well. Pour syrup into container and let cool.

Ingredients: 2 oz. Broken Shed Vodka 1 oz. kiwi puree-infused syrup 1 oz. fresh lemon juice 1 egg white Preparation: Dry shake all the ingredients, then shake again with ice. Double strain into a coupe. Garnish with grated salt-cured egg yolk.

Ingredients: -1 1/2 oz coconut infused Wheatley vodka -1 oz Thai basil and ginger simple syrup -3/4 oz oat milk -1/2 oz aquafaba -1/4 oz lime juice -1/4 oz lemon juice -1 bar spoonful of matcha powder Preparation: Add all ingredients to a shaker and shake with ice. Strain into toasted coconut rimmed Collins glass and fill with ice.

Ingredients: -1 1/2 oz. reposado tequila -1/2 oz. crème de cassis -1/2 oz. lime juice -4 oz. ginger beer (to top) -1 lime wedge (for garnish) Preparation: Add ingredients to a shaker filled with ice, shake, strain into a Collins glass filled with ice. Top with ginger beer. Garnish with lime wedge.

Maui Gold Fashioned
Ingredients: -1 3/4 oz Bourbon -1/2 oz Averna Amaro -2 bar spoons Maui Gold Pineapple Demerara Syrup* -2 dashes Angostura and Xocolatl Mole Bitters Preparation: Combine all ingredients and stir in a mixing glass. Strain over a large ice cube. Garnish with an expressed lemon peel and dehydrated pineapple. *Maui Gold Pineapple Demerara Syrup: Juice and strain a fresh pineapple. Combine equal parts of pineapple juice to raw Demerara sugar. Dissolve over heat.

Ingredients: -2 parts Brockmans Gin -Splash of Raspberry eau de vie -1 part Fresh lemon juice -½ part Black currant leaf syrup Preparation: Combine ingredients in a shaker with ice. Shake vigorously and strain into a rocks glass. Garnish with a slice of lemon and fresh raspberries.

Ingredients: -1 1/2 oz Tattersall Aquavit -1/2 oz Skinos Mastiha Spirit -1 oz Cucumber Syrup -3/4 oz Fresh Lemon Juice -1/2 oz Dill-Infused White Tea -Cucumber slices, fresh dill, lemon (for garnish) Preparation: Combine all ingredients in a Collins glass, give it a light shake, strain over a large cube.
