recipe for Biltong: 2 kg beef fillet • 150 ml red wine vinegar • 50 ml Worcestershire sauce • handful coriander seeds, coarsely ground • 1 tbsp black pepper, coarsely ground • 500 g fine sea salt • 150 g brown sugar • 1 tsp bicarbonate of soda click on the link for the method.
