Dutch Koffiekoekies / Coffee Cookies-with a coffee-fudge filling. These biscuits are regarded as a bit of a delicious luxury because it's hard work to make them. But the result is such a delightful mixture of textures and flavours, that it's well worth the effort.
Marie Biscuit Chocolate Fudge: 250g butter, 500g icing sugar, ½ cup good quality cocoa, 1 egg, slightly beaten 1 packet Marie biscuits broken into pieces Melt butter, add icing sugar and cocoa and mix well. Stir in the beaten egg mixture + mix well. Add the biscuits and fold in until they're covered. Pour mixture into pan + flatten with spatula. Cool in refrigerator, cut into squares.
